Fix typo in bevy_reflect README (#8281)

# Objective

Fix typo in bevy_reflect README: `MyType` is a struct and not a trait,
so `&dyn MyType` is incorrect.

## Solution

Replace `&dyn MyType` with `&dyn DoThing`
