Add ReflectComponent registration for Sprite (#8207)
# Objective

- `Sprite` components are not included in scene (de)serialization.
- Fixes #8206

## Solution

- Add `#[reflect(Component, Default)]` to `Sprite`
- Add `#[derive(FromReflect)]` to `Sprite` and `Anchor`
